My dandelion egg recipe
Have you realised that fried egg tastes different depending on the ingredients you add to it. Well, I have relished egg recipes ranging from no veggies to that packed with cabbages, onions, tomatoes and even with a little milk! and they all came with their own unique tastes but I created this dandelion egg recipe for a number of reasons;
1. To relish a different taste
2. For the health benefits
3. and because it’s quick and easy to make
This particular recipe was inspired by my new dandelion garden which I started nurturing because of the myriad benefits of dandelion.
Health benefits of dandelion include relief from liver disorders, diabetes, urinary disorders, acne, jaundice, cancer and anaemia. It also helps in maintaining bone health, skin care and is a benefit to weight loss programmes.
I am pretty sure that I am not the first to have tried this recipe but then again, if you haven’t tried anything like this before, why don’t you follow the steps below to try out my very special dandelion egg recipe. I’m sure you’ll love it!
1 tablespoon of olive oil
Pinch of salt
3-4 dandelion leaves
Piece of onion (optional)
Curry powder (optional)
Break open eggs into a bowl. Add a pinch of salt and whisk together. Wash the dandelion very well and cut them in large pieces. Slice onions into thin stripes if you will add it to your recipe and set aside.
Put your non-stick frying pan on fire on low heat and add your oil.
Pour the egg mixture into pan and allow 2 minutes and turn it over until you get a light brown for the egg, and dark green for your dandelion.
Remove it with a spatula and put it on plate.
You can put this between two slices of bread and enjoy it with tea or serve it as part of your dinner!
